1. Heat a large pot of salted water to boiling and cook pasta for 4 minutes. Drain and rinse lightly and set aside.
2. While water is coming to a boil/pasta is cooking, prepare the cheese sauce. Heat 6 tbsp butter in a large, deep saucepan over medium heat. Once melted, whisk the flour in and be sure no lumps remain. Continue whisking for 1-2 minutes or until the flour mixture becomes golden and begins to bubble.
3. Gently pour in milk and heavy cream and continue to whisk to avoid lumps. Cook for 4-5 minutes or until mixture has thickened and is constantly bubbling.
4. Whisk in the cheddar cheese until smooth, then repeat with the cheddar jack cheese, whisking until the cheese sauce is smooth. Add salt and pepper to taste.
5. Add cooked pasta to the cheese sauce and stir to coat evenly.
6. Add half the macaroni and cheese to the prepared baking dish, then add half the gouda in an even layer. Top with remaining macaroni and cheese and the rest of the gouda.
7. In a medium bowl, combine bread crumbs, melted butter, parmesan cheese and paprika and mix thoroughly. Sprinkle this evenly over the top of the macaroni and cheese.
8. Bake macaroni and cheese for 20-25 minutes, or until golden brown and bubbly.
9. Serve!
